Coconut Beef Curry With Zucchini | How To Cook Beef Curry With Coconut Milk
I would like to show you my very favorite beef curry with coconut milk recipe.
This beef curry is very simple and very healthy because it's made only from healthy ingredients and doesn't require any cooking skills.
Base of this coconut curry is made from shredded zucchini which will almost dissolve after 2 hour of cooking and will naturally thicken the curry.
I also love adding green peppers which will add extra layer of flavor to the curry.
I also recommend using beef shank which is great choice for curries. It's little fatty but it's tastier than lean cuts of beef. Also if you will serve this coconut curry with cauliflower rice then extra fats won't ruin your diet.
You can make beef curry quickly by cutting beef into small pieces but I recommend to take time and let it cook for almost 2 hours which will allow meat, spices and vegetables to release much deeper flavors.
And if you want to make it even better let it rest for 24 hours before eating.
I have also added splash of coconut milk which works really great in beef curry but you can also use heavy cream if you don't have coconut milk. Adding coconut milk is optional and curry is delicious even without it so if you want to keep low fat content just don't use it.
Last thing about this curry is spice mix which makes curry's taste. I have used my favorite madras curry from Vitasia which consists of turmeric, sweet paprika, mustard seed, fenugreek, chili, fennel and oregano But feel free to use your own favorite curry mix.
